Carrot Dip

CARROT DIP

Ingredients

500gms carrots
1 teaspoon paprika (Preferably Hungarian)
1 teaspoon cumin powder
2 tablespoons lemon juice
4 tablespoons olive oil
1 clove crushed garlic
½ teaspoon powdered ginger

Boil the carrots in salted water until very soft.
Drain and put into a food processor with the rest of the ingredients.season with salt and pepper to taste.
For those who like hot and spicy, add ground chillies or Tabasco to taste.
Serve with dry biscuits or pitta bread.
